Christmas cookies time !!!! Our favorite time of the year is here ! happy first of December everyone. How existed are we!
You gonna love those one ; christmas cookies and gluten free and you know us with sugar, less you put it better is.
This is what you will need :
2 cups all-purpose gluten free flour, plus more for rolling
1/4 teaspoon salt
1 cup granulated sugar
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1/2 cup ( 1 stick) vegan unsalted butter ( we used lactose free)
1 large egg
Sprinkles, or colored sugar ( for decorating) optional
1 1/2 cup confectioners’ sugar
3-4 tablespoon of almond or coconut milk, water or lemon juice
How to make them :
whisk flour, baking powder and salt in a large bowl, in another one mix cream butter and sugar until light and fluffy ( you can use an electric mixer. Beat in egg and vanilla, gradually add four mixture while still beating. Beat until combined. Once ready put in a plastic bag and freeze until firm ( 20 to 30 mins).
Preheat the oven to 325 degrees. Line baking sheets with parchment. Remove the dough disk, let it stand 5 to 10 mins . Roll out 1/8 inch thick between two sheets of floured parchment, cut shapes with cookie cutters ( christmas three, starts…. Reroll scraps, cut shapes. repeat with remaining dough, if dough gets soft, chill 1à minutes.
Bake your christmas cookies rotating halfway through until edges are golden ( 10 to 15 mins depending of size). Cool them completely before icing and decorating your christmas cookies.
Whisk the almond milk, water or lemon juice and sugar at a time until smooth and thick enough to coat the back of the spoon.
After decorating your cookies, let the icing harden about 20 mins.
